Port #1 marks our first Port Cask whisky, matured in an ex-Tawny barrel from a legendary Port producer based in the Barossa Valley. Bottled at 45% ABV, it’s rich, layered, and extremely approachable. Perfect for new and seasoned whisky drinkers alike.
On the nose, expect toffee, red berries, and a touch of spice. The palate is smooth and inviting, with notes of vanilla, red cherry, and toasted nuts.
Pair it with dark chocolate, triple-cream brie, or rich pork belly.

This ultra-limited release marks our first Pedro Ximénez-matured whisky, resting in a barrel from the renowned Spanish sherry house Fernando de Castilla. Bottled at 45% ABV, it’s a layered and indulgent single malt, combining the sweetness of dried fruit with the gentle depth of oak — slowly developed in Tasmanian conditions.
On the nose, you’ll be met with candied fig, treacle, and a hint of orange peel. The palate is rich and smooth, with sticky toffee, fruit cake, and dark chocolate notes unfolding.
Enjoy it how you like - we would pair it with tiramisu, funky cheese, or roast lamb.
